Watermelon & Blueberry Popsicles

Due to the meal planning of 21 Day Fix, I have renewed my love of fresh fruits.  We’re even trying a new fruit a week in our house so that I’ll expose my girls to more variety.  No matter what though, I always think of watermelon and blueberries as my go-to summer fruits.  Both of my girls love them.  Since it’s been close to 100 degrees since moving to North Carolina I decided that we needed something a little refreshing and yet healthy so I put the two together and created Watermelon & Blueberry Popsicles.

These popsicles are by far one of the easiest I’ve ever made and only need 3 ingredients plus the popsicle molds.  These popsicle molds are super simple to use and I share a great little trick on how to get them out HERE.  Otherwise, I’ve had great success with the Zoku popsicle molds.

Watermelon Fruit Popsicles

The watermelon that I used for these popsicles made a ton of juice when I processed them in our Ninja Blender.  I have a tendency to use our Ninja for just about anything because the clean up is so much easier.  Plus, it’s easy to add ingredients to it as you go.  Since there was so much juice from the watermelon I added in a cup of plain yogurt, but I added in 1/2 a cup at a time so that I could check the consistency of the mixture.  I didn’t want it to be too thick.  My consistency was perfect to gently mix in the whole blueberries.

Watermelon Blueberry Popsicles

My girls loved the fact that they could see the strawberries in it.  I think there’s just something about knowing what you are eating.  They usually get just as excited with finding the full strawberries in our Strawberry Lemon Popsicles.  It’s the little things and I love that infectious excitement that they have because it reminds me to take time to appreciate their genuine zest for life.

Watermelon & Blueberry Popsicles

Healthy and refreshing watermelon & blueberry popsicles make the perfect summer time snack.
Prep Time 15 minutes
Servings 12

Ingredients

  • 2 cup watermelon
  • 1 cup plain yogurt
  • 1/2 pint blueberries
  • popsicle molds

Instructions

  • In a blender combine the watermelon and yogurt and process.
  • Mix in the fresh blueberries.
  • Pour the mixture into popsicle molds and freeze for six hours.
